What are some great recipes using celery?
Not realizing that my food co-op was already providing us with two bunches of celery, I ordered an extra two bunches. And have almost a whole bunch in the refrigerator. So now I have five bunches.
Oops.
The reason I was so intent on having enough celery is that I want a non-sugar source of potassium (bananas are the sugary source) to eat every day, and celery is a good economical one. I’ve been eating at least a cup of raw, sliced celery per day as part of my lunch salad. The question is, do I really want any more?
At least celery keeps longer than most veggies. For that I shall be eternally grateful over the next couple of weeks. But not sure that my family can eat all that celery up before it starts to go bad, here are some ideas I have to use it up a little faster than normal.
- Encourage Benjamin (Mr. Picky) to eat celery with almond butter for snacks. If I cut the celery into bite-sized pieces, that might actually work!
- One night this week we could each take a stalk and pretend to swordfight.
- Since I also ordered extra tomatoes, a couple times this week we can have (big!) salads consisting of cut-up celery and tomatoes with some sprouted lentils and broccoli sprouts.
- I could cut up a bunch, braise it, and freeze it for the next time I make stock.
- We could produce our very own VeggieTales movie.
What else could I do…hmm…let me search “celery recipes”…
A-HA! Found it! A site with a ton of celery recipes. Let’s see…”Banana and celery soup.” Say WHAT? Think I’ll skip that one, thank you very much. (Which reminds me, though, I could make a big ol’ green smoothie using celery as the greens.)
Lotsa cream of celery soup recipes, but I have no raw cream (won’t use the pasteurized, uh-uh). But this looks good: “Scalloped Celery With Cheese.” Still a little hot outside to have the oven on. Say, though, I could make a cheese sauce and pour it over sliced celery! And serve sliced tomatoes on the side.
Speaking of tomatoes, this recipe looks good.
Celery and Tomato Salad
- 1 pint diced fresh tomatoes
- 1/4 cup dressing
- 1/2 cup cut-up celery [I'd use more celery, obviously
]
Mix all and serve.
Simple, and sounds delicious! Let’s see if I can find one more celery recipe to share. Here’s an interesting one, for those of us who are trying to get more iron in their diet:
Chicken Liver, Celery, and Green Pepper Salad
- chicken liver, cold-boiled and diced finely
- chopped celery
- green pepper, seeded and cut into strips
- lettuce
- Russian dressing
Place some lettuce leaves on each plate. Mix together the rest of the ingredients and place in center of lettuce leaves.
That one might not be too bad, if I use enough dressing. And I would use non-green bell pepper for a sweeter flavor.

I use a recipe called celery slaw which I found in a old cookbook. Unfortunately, I am not at home and do not have recipe with me. Some of the ingredients are celery, carrots, sour cream, and paprika, maybe you can find recipe on line. It is one of my family’s favorite recipes.
Sounds tasty!
